Scarlett has an entire range of products depending on your needs. It is not necessary to spend a great deal of money on a microphone but you do need to select the right one for your needs. It will support a wide variety of microphones and that is very personal choice to make depending on your precise needs and budget. There are other products but I absolutely love my Focusrite Scarlett 2i2 which provides 2 Mic / Instrument inputs. The Focusrite Scarlett devices are popular with podcasters and YouTubers.

A great deal of additional software licenses are included with the Scarlett products including some plugins that work with GarageBand and Logic as well as bundles of alternatives like Pro Tools (personally hate Pro Tools but to each their own) and Abelton. The Scarlett brand was quick to adopt M1 support and it's simpler as the DAW box does all the heavy lifting in hardware and merely needs to connect to the Mac with a simpler software driver. You can connect external speakers (powered studio monitors KRK, etc.) to it and they mostly all have a headphone monitoring capability. The DAW will have inputs / outputs and handle all the analog to digital and digital to analog conversion. Instead of relying on a microphone that connects via USB you connect a traditional high quality microphone to the USB DAW device that connects to your computer via USB. You would be far better served by selecting a USB DAW audio input device and professional microphone inputs. If it worked a certain way in 2002, it should work that way in 2022! But 3rd party developers regularly refuse to use them. Apple does try to provide alternative interfaces and officially-supported APIs that don't need these system extensions. Generally I tend to side with Apple on these fights. Essentially, you have to large corporations passive-aggressively fighting each other.

So the drivers that come with 3rd party hardware devices are just awful. And on the other side, absolutely nobody writes worse software than hardware manufacturers. That's why they are so difficult to install, use, and uninstall.
Unfortunately, Apple discourages these kinds of low-level system modifications. Restarting and/or reinstalling may reset things and trigger it to show up again.
After that, it won't show in the preference pane any more. Those blocked system extensions can only be unblocked within 30 minutes of installation. You can try uninstalling all of the software and then reinstalling. Then immediately to back to System Preferences > Security & Privacy and see if the blocked extension is listed.
